Name: Tony Athans

Where we saw him:

At Ribfest in the Northcenter neighborhood, at the Lincoln Restaurant booth. He was manning BBQ ribs on the grill. Lincoln Restaurant is located at 4008 N. Lincoln Ave.

How long has the Lincoln Restaurant been a part of Ribfest?

We actually were one of the first booths, at the first Ribfest which was started over 15-20 years ago.  We are a family-owned and operated restaurant that has been in the neighborhood since 1970.

How did Ribfest start?

We wanted to have a festival here for the Northcenter Chamber. Working together with the chamber members we came up with this idea, and it ended up turning into Ribfest. People like ribs and bbq in the summer.

What should cooks at home know about cooking great ribs?

In order to cook great ribs you have to burn them on low and slow either on the grill or in the oven from anywhere between 3-4 hours.

One of the best sauces for ribs at the store?

If you like a sweeter BBQ sauce, Sweet Baby Rays is really good.

Best side dishes to go with ribs?

We are serving our ribs with fries and corn on the cob

What is your restaurant known for?

We are open from 6:30 AM to 10:30 PM, so we have a little bit of everything for breakfast, lunch and dinner, but we are mainly known for our breakfast.

Besides ribs, what is the next best thing on your restaurant’s menu?

Our omelet for breakfast.

Basketballs Playoffs – Mavericks or Heat?

I have to go with the Mavericks.  I like Patrick Riley, but I can’t cheer for LeBron James.
