It looks like a new competitor is throwing its sustainable hat into Chicago’s already hot pizza oven. American Flatbread recently signed a lease with the owners of Fountain View on Giddings Plaza, and have started working in the huge, previously empty space on the ground floor.
And even though they don’t use the word “pizza” very often to describe their flatbreads made with local and organic ingredients, you’ll be happy to hear that they know better than to cut them in wedges.
This is the company’s first foray into the Midwest. Their other restaurants are located in Vermont, Virginia and Oregon. At this time, they are projecting April 2011 for their opening date.
